Collagen is the most abundant protein in the human body, but also in the animal kingdom. It alone represents a quarter of the proteins present in mammals. Acting as a glue, hence its name, and acting as a structural protein, collagen ensures the flexibility and elasticity of our tissues. There are currently 28 different types of collagens, each of which is specific to one or more organs. Type II collagen is found mainly in joints and cartilage. This type of collagen, present in its native, non-hydrolyzed form, is used in particular in people with joint disorders that may be associated with an auto-immune response, which attacks endogenous type II collagen. Its intake is part of an "oral tolerance" mechanism, a principle based on the ingestion of a food to modulate the body's immunity. When it comes into contact with the food, the immune cells, and more particularly the regulatory T lymphocytes (T reg), become activated. These then pass into the bloodstream to reach the joints where they produce anti-inflammatory mediators, thus protecting endogenous type II collagen from degradation. Thus, a supply of type II collagen helps regulate the immune response against native collagen and contributes to the maintenance of good joint health.
