Description
Glucoamylase is an enzyme of the glycoside hydrolase family. This enzyme is involved in digestion and is released in the cells of the small intestine.
It breaks the bonds between two glucoses contained in polymers such as starch.
Its particularity is to hydrolyse the residues from the ends of the molecule. This enzyme is therefore called « exoglycosidase ».
